Prosciutto Basil Chicken.

This was really fast and super yummy! 

Preheat your oven to Broil (about 500 degrees) Butterfly chicken breasts in half and pound to make thinner, this helps them cook faster on the grill so you don't end up with too crispy outside and raw inside. 

Salt and pepper well and put on grill. 

I liked to do it at a 45 degree angle so it looked cool. Take them off and allow to cool a little. 

Take two slices of prosciutto for each chicken and wrap around so the seal is on the bottom. 



Add a thin layer of sliced cheese.  I used swiss but provolone would have been amazing.  Place fresh basil on the top and place in broiler oven.  While this cooks you can make a quick side of asparagus.   

heat olive oil in pan. 

Add asparagus and cook for about 1-2 minutes. 

Squeeze lemon over the top. 

Chicken should be done by this point! Take it out and dish it up.
