Spring pasta!







So I chopped up a ton of veggies! Asparagus,  broccoli, and zuchinni! 

Take 1/3 cup white wine. 

1/4 cup vegetable broth.

Also so onions and tomatoes to add at the end. 

Slice up a chicken breast into thin slices

Add 2 teaspoons of whole wheat pastry flour to the vegetable brother and mix with the white wine. 

Oil a pan with olive oil. 

Cook the chicken through until lightly browned on each side. 

Add a large amount of garlic! 

Add onions

Add spices - I used the classic italian mix - basil, oregano, and thyme.  Deglaze the pan with the vegetable oil, flour, and wine mixture. 

Cook until onions are soft then add veggies. 

Toss until veggies are bright green. 

Toss in pasta and coat it with the liquid left in the pan.  



Pepper and top with your favorite cheese!

  1. I'm doing something similar to this tonight with whole grain roasted garlic and parsley linguine. So excited for dinnertime!
